1 cup all-purpose flour

1 cup whole wheat flour

2 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

1 cup pumpkin puree

1 1/2 cups milk (dairy or non-dairy)

2 large eggs

1/4 cup melted butter or coconut oil

1 teaspoon vanilla extract

Instructions
 

Preheat your waffle iron according to the manufacturer’s instructions.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

      In another bowl, combine the pumpkin puree, milk, eggs, melted butter (or coconut oil), and vanilla extract, mixing until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

          Lightly grease the waffle iron with a small amount of butter or oil, if necessary.

            Pour an appropriate amount of batter into the preheated waffle iron (amount will depend on the size of your iron). Close the lid and cook according to your waffle iron's instructions until the waffles are golden brown and crispy.

              Carefully remove the waffles and repeat with the remaining batter.

                Serve immediately with maple syrup, whipped cream, or a dusting of powdered sugar, and be sure to sprinkle some extra cinnamon on top for added flavor.
