rainbow carrots (or regular carrots), trimmed and cut into even sticks

olive oil

garlic, minced

fresh thyme leaves (or 1 teaspoon dried thyme)

fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
to taste
Salt and freshly ground black pepper

honey or maple syrup (optional, for sweetness)

Fresh parsley, chopped
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the trimmed and cut rainbow carrots with olive oil and minced garlic.
Add thyme, rosemary, salt, and pepper to the bowl. If you like a hint of sweetness, drizzle in the honey or maple syrup.
Toss all the ingredients together until the carrots are well coated in the mixture.
Spread the carrots in a single layer on the prepared baking sheet to ensure even roasting.
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, flipping them halfway through to promote even cooking.
Once cooked, remove the carrots from the oven and let them cool for a couple of minutes.
Before serving, sprinkle with freshly chopped parsley for a pop of color and flavor.
Notes
Optional sweetness can be added with honey or maple syrup.
