pure maple syrup

garlic powder

Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the brussels sprouts, sweet potato, red bell pepper, and carrots.
In a separate small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and black pepper until well combined.
Pour the maple Dijon mixture over the vegetables and toss until all the vegetables are evenly coated.
Spread the coated vegetables in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized, stirring halfway through for even cooking.
Once done, remove from the oven and let cool for a couple of minutes.
Garnish with freshly chopped parsley before serving.
Notes
Feel free to add any other seasonal vegetables you have on hand.
