Instructions
In a large mixing bowl, combine the shredded chicken, basil pesto, cherry tomatoes, red onion, and mozzarella cheese.
Drizzle the lemon juice over the mixture and season with salt and pepper. Stir well to coat all the ingredients evenly with the pesto.
Take a lettuce leaf and spoon a generous amount of the pesto chicken salad mixture into the center.
Fold the sides of the lettuce leaf over the filling to create a cup shape. Repeat with the remaining leaves and filling.
Optionally, garnish with fresh basil leaves for extra flavor and color.
