coconut milk (canned or carton)

maple syrup (or honey)

mixed berries (strawberries, blueberries, raspberries)

granola (your choice)

shredded coconut (unsweetened)

mint leaves (for garnish, optional)
Instructions
In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, and vanilla extract. Whisk well until combined.
Cover the bowl and refrigerate for at least 4 hours, or ideally overnight, to allow the chia seeds to swell and create a pudding-like consistency.
Once the chia mixture is ready, prepare your serving glasses or bowls.
Begin layering the parfait: Start with a layer of the chia pudding at the bottom of each glass.
Add a layer of mixed berries on top of the chia pudding.
Next, add a layer of granola over the berries, then sprinkle shredded coconut on top.
Repeat the layers until the glasses are filled, finishing with a generous layer of berries and a few sprinkles of coconut on top.
Optional: Garnish with fresh mint leaves for a pop of color and freshness.
Notes
For best results, let the chia pudding sit overnight.
