Instructions
In a large skillet, heat olive oil over medium heat.
Add the sliced sausage and sauté for about 5 minutes, or until browned on the edges.
Add the chopped onions and bell peppers to the skillet and cook for another 4-5 minutes until they are soft.
Stir in the minced garlic, Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Cook for an additional minute until fragrant.
Increase heat to medium-high and add the diced potatoes to the skillet, stirring well to combine.
Cover the skillet with a lid and allow the potatoes to cook for about 15-20 minutes, stirring occasionally, until they are tender and cooked through.
Once the potatoes are cooked, remove the lid and cook for another 2-3 minutes to crisp up the potatoes slightly.
Taste and adjust the seasoning if necessary.
Remove from heat and garnish with chopped green onions and fresh parsley before serving.
Notes
Adjust the cayenne pepper to taste for desired spiciness.
