cauliflower, cut into florets

all-purpose flour

Instructions
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.
In a large pot, bring water to a boil. Add the cauliflower florets and blanch for about 5 minutes until slightly tender. Drain and set aside.
In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour, stirring constantly for about 1-2 minutes to form a roux.
Slowly add the whole milk to the roux while continuing to whisk until the mixture thickens, about 5 minutes.
Stir in the garlic powder, nutmeg, Dijon mustard, and season with salt and pepper. Remove from heat.
Add the shredded cheddar and grated Parmesan cheeses to the sauce, stirring until the cheese has completely melted and the sauce is smooth.
Incorporate the blanched cauliflower into the cheese sauce and mix until well coated.
Pour the cheesy cauliflower mixture into the prepared baking dish. If desired, sprinkle breadcrumbs over the top for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
Once out of the oven, let it sit for 5 minutes before serving. Garnish with freshly chopped parsley.
Notes
Breadcrumbs are optional for topping.
