Instructions
Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal later.
In a large bowl, combine the almond flour, rolled oats, brown sugar, granulated sugar, cinnamon, and salt. Mix well to combine.
Add the cubed cold butter to the dry ingredients. Using your fingers or a pastry cutter, blend until the mixture resembles coarse crumbs.
Press half of the crumble mixture evenly into the bottom of the prepared baking dish to create a base layer.
In a separate bowl, toss the halved cherries with the vanilla extract and almond extract. Spread the cherries evenly over the base layer.
Crumble the remaining oat mixture over the cherries, ensuring an even layer.
Sprinkle sliced almonds over the top for added crunch.
Bake for 30-35 minutes or until the top is golden brown and the cherries are bubbling.
Allow to cool completely in the pan before lifting out using the parchment overhang. Cut into bars.
Notes
Serve the bars dusted with powdered sugar for an elegant finish, and garnish with fresh cherries on the side for a pop of color.
