Preheat your air fryer to 160°F (70°C) for about 5 minutes.
While the air fryer heats up, wash and dry the apples. Core them and slice them thinly (about 1/8 inch thick) using a mandoline or a sharp knife.
In a bowl, toss the apple slices with the lemon juice, sprinkles of cinnamon, sugar (if using), and salt until evenly coated.
Arrange the apple slices in a single layer in the air fryer basket, ensuring they don’t overlap. You may need to do this in batches depending on the size of your air fryer.
Air fry the apple slices at 160°F (70°C) for 10-15 minutes, checking for crispiness and flipping them halfway through. Adjust the time as necessary for thicker slices; they should be golden and crisp but not burnt.
Once done, remove the apple chips from the air fryer and let them cool for a few minutes on a wire rack, where they will continue to crisp up.
Store in an airtight container once completely cooled to maintain crispiness.
