In a large mixing bowl, combine the halved baby potatoes, olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Toss until the potatoes are well-coated.
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25 minutes. Remove from the oven and sprinkle the grated Parmesan cheese evenly over the potatoes.
Return to the oven and continue roasting for another 10-15 minutes, or until the potatoes are golden brown and crispy.
Once done, take them out of the oven and let them cool for a couple of minutes.
Garnish with freshly chopped parsley before serving.

Serve on a large platter with extra parsley and lemon wedges for a fresh twist.
