In a large mixing bowl, combine the halved baby potatoes, minced garlic, olive oil, dried rosemary, dried thyme, smoked paprika, salt, and pepper.
Toss the ingredients together until the potatoes are well coated with the oil and herbs.
Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, flipping them halfway through for even cooking.
Once done, remove from the oven and let them cool for a couple of minutes.
Garnish with chopped fresh parsley before serving for an extra touch of color and flavor.
