Add the minced garlic, grated Parmesan cheese, dried oregano, paprika, salt, and pepper to the potatoes. Mix well to ensure all potatoes are evenly coated with the seasonings.
Spread the potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This will help them roast evenly.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, stirring halfway through for even cooking.
Once roasted, remove the potatoes from the oven and allow them to cool slightly.
Garnish with fresh chopped parsley before serving.
