Instructions
In a large skillet over medium heat, add the ground chicken and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).
Add the minced ginger and garlic to the skillet, stirring to combine, and cook for an additional 2 minutes until fragrant.
Pour in the soy sauce, fish sauce, honey, lime juice, and lime zest; stir well to coat the chicken evenly.
Add the diced red bell pepper and shredded carrots to the skillet, cooking for another 3-4 minutes until the vegetables are tender.
Season with salt and pepper to taste, and then remove from heat.
To assemble the lettuce wraps, take a leaf of lettuce and spoon a portion of the chicken mixture into the center.
Top with chopped green onions and any additional toppings of your choice like cilantro, crushed peanuts, or sesame seeds.
Fold the lettuce leaf around the filling and enjoy as a healthy and vibrant wrap!
