In a large mixing bowl, combine ground turkey, feta cheese, Kalamata olives, red onion, garlic, oregano, salt, and black pepper. Mix until well combined but do not overmix.
Form the mixture into 4 equal-sized patties, ensuring they are evenly shaped.
Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side or until the internal temperature reaches 165°F (75°C) and they are golden brown.
While the patties are cooking, prepare the salad base by dividing the mixed greens into four bowls.
Add the halved cherry tomatoes and diced cucumbers on top of the mixed greens in each bowl.
Once the patties are cooked, place one patty on top of the salad in each bowl.
Drizzle tzatziki sauce generously over the patties, and garnish each with fresh parsley.
