In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and peppermint extract. Stir until well blended.
Add the mini dark chocolate chips, shredded coconut, chia seeds, and a pinch of salt to the mixture. Use a spatula or your hands to mix everything thoroughly until combined.
Once the mixture is homogenous, use your hands to roll it into small balls, about 1 inch in diameter. If the mixture is too sticky, dampen your hands slightly with water to help roll them.
Place the energy bites on a parchment-lined baking sheet. Once all the mixture is rolled into balls, refrigerate the bites for at least 30 minutes to help them firm up.
Store the energy bites in an airtight container in the refrigerator for up to one week, ready to grab for a snack!
