Instructions
Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the rolled oats, ground flaxseed, chopped nuts, and a pinch of salt. Mix well.
In a microwave-safe bowl, gently heat the peanut butter and honey (or maple syrup) for about 30 seconds until warm and slightly runny. Stir in the vanilla extract until combined.
Pour the peanut butter mixture over the oat mixture. Stir thoroughly until all dry ingredients are well incorporated.
Fold in the dark chocolate chips until evenly distributed.
Pour the mixture into the prepared baking pan and press it down firmly using a spatula or your hands to create an even surface.
Bake in the preheated oven for 15-20 minutes, or until set and slightly golden around the edges.
Remove from the oven and let cool in the pan for at least 10 minutes before lifting it out using the parchment paper overhang.
Once cooled completely, cut into bars of your desired size.
Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
