Instructions
In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, honey (or maple syrup), ground flaxseed, vanilla extract, pumpkin pie spice, and salt.
Mix all the ingredients until thoroughly combined. The mixture should be sticky but firm; if it’s too dry, add a tablespoon of water or more nut butter.
Fold in the chocolate chips or dried fruits if using.
Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Place the rolled energy bites on a baking sheet lined with parchment paper.
Once all the mixture has been rolled into bites, refrigerate for at least 30 minutes to firm them up.
Store the energy bites in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
