Prepare the Marinade: In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and black pepper until well combined.
Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
Preheat the Oven: Preheat your oven to 400°F (200°C).
Arrange the Chicken: Remove the chicken from the marinade, shaking off excess liquid. Place the chicken thighs skin-side up in a baking dish.
Bake: Bake in the preheated oven for about 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
Glaze: While chicken is baking, pour the remaining marinade into a small saucepan. Bring to a boil, then reduce heat and simmer for about 5-7 minutes, until it thickens slightly.
Serve: Once the chicken is cooked, remove from the oven and brush with the thickened glaze. Let rest for 5 minutes.
Garnish: Sprinkle with chopped green onions and sesame seeds before serving.
Notes
For best flavor, marinate the chicken for up to 4 hours.
