Begin by cooking the rice noodles according to package instructions. Drain and set aside, tossing with a bit of sesame oil to prevent sticking.
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced beef and sauté for about 3-4 minutes until browned. Remove beef from the pan and set aside.
In the same skillet, add the remaining tablespoon of sesame oil. Add the broccoli, bell pepper, and carrot. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
While the vegetables are cooking, prepare the teriyaki sauce: In a small bowl, mix together soy sauce, honey, minced garlic, and grated ginger.
Return the beef to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes until everything is heated through.
To assemble the bowls, place a portion of rice noodles at the bottom of each serving bowl. Top with the teriyaki beef and vegetable mixture.
Garnish with chopped green onions and a sprinkle of sesame seeds for a crunchy finish.
