1
cup
coconut milk (canned for creaminess)
0.5
cup
coconut water
2
tablespoons
honey or agave syrup
1
tablespoon
lime juice
1
pinch
salt
optional
shredded coconut for garnish
Instructions
In a blender, add the diced mangoes, coconut milk, coconut water, honey (or agave syrup), lime juice, and a pinch of salt.
Blend on high until smooth and creamy, ensuring no chunks of mango remain.
Taste the mixture and adjust sweetness if needed by adding more honey or agave syrup.
Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion.
Insert popsicle sticks into the molds and freeze for at least 6 hours, or until fully solid.
To remove the popsicles, run warm water over the outside of the molds for a few seconds until they slide out easily.
If desired, roll the popsicles in shredded coconut before serving for an extra tropical flair.
Notes
Adjust sweetness based on preference and garnish with shredded coconut for extra flavor.
