  • 8 oz linguine or spaghetti
  • 1 cup low-sodium chicken broth
  • 1 4 cup grated Parmesan cheese (optional)

Instructions
 

  • In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  • In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant.
  • Add the shrimp to the skillet, seasoning them with salt and black pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes on the other side until fully cooked.
  • Pour the chicken broth and lemon juice into the skillet, scraping any bits from the bottom of the pan. Bring to a simmer and let it cook for about 2-3 minutes.
  • Stir in the remaining butter, the pasta, lemon zest, and reserved pasta water. Toss everything together until the pasta is thoroughly coated in the sauce.
  • Remove from heat and sprinkle with chopped parsley and Parmesan cheese, if using. Adjust seasoning to taste.

Notes

Serve in a large pasta bowl, garnished with parsley and lemon wedges.
