Ingredients
  

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

4 cups vegetable broth

1 can (14 oz) diced tomatoes with Italian herbs

1 can (15 oz) cannellini beans, drained and rinsed

2 cups kale or spinach, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

1 lemon, juiced (for a fresh twist)

Grated Parmesan cheese for serving (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Sauté until browned and cooked through, about 6-8 minutes. Remove and set aside, leaving the fat in the pot.

    In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until the vegetables are softened.

      Add the minced garlic and sauté until fragrant, about 1 minute.

        Stir in the diced tomatoes (with juices), vegetable broth, and the cooked sausage. Bring the mixture to a simmer.

          Add the cannellini beans, oregano, basil, salt, and pepper. Let the soup simmer for about 15 minutes, allowing the flavors to meld together.

            Stir in the chopped kale or spinach and cook for an additional 5 minutes until wilted.

              Finish with a squeeze of fresh lemon juice for brightness and flavor. Adjust seasoning if necessary.

                Serve hot, garnished with grated Parmesan cheese if desired.
